I was thinking of going 5 stud on the Sigma, as i am not really liking the wheel selection available. So what i was thinking is of running a Starion strut, with the widebody 5 stud hub and brakes on the front. For the rear i was looking into using a scorp diff and just re-drilling the rear axles.
Has anyone done this? Is there any potential issues that anyone can see?

Why not go for an alternate axle in the rear?
Like an XE/F Falcon Diff (140mm wider, but can be shortened)
or Skyline diff.. I know the R31 is only 60mm wider, but I'm fairly sure they're 4 stud, can't quite remember.
Either way there are countless options, redrilling could even work too.. just not something I would do as I believe that it weakens the integrity of the hub.
But I've never gone down that path so I can't really say from experience

I'm planning on doing this, however i've got a centura diff for the rear.

Ive done this conversion i used the 114.3 x 5 pattern.
For the front i used Vc-Vp after market hubs redrilled and machined to
fit my Scorpion strut axle so i could run BA falcon disks and calipers.
For the back same pattern just redrilled the axle to 5x114.3 as only
had to drill 4 holes so i could use EF falcon rear disks still running
rear Scorpion caliper.
If you drill the rear and get it in the right place none of the drilling
crosses the other holes.
Check the offset of the rims you would like to put on could have
issue with offsets over 30mm mainly on the front.
I had to move the spring retainer on the strut up to fit the wheels i had.

How does that work?
I have wheels which are drilled for both 4 and 5 stud x 114.3.. And 1 hole is used for both patterns, and in 2 other occurances, holes are touching with about 20% overlap

Why would you drill wheels.
Obviously the plate on the axle ive got have a bigger section
and less holes ,only one to undo axle retainer plate.

i did it..
Used a crappadore diff...
And got blank sigma hubs drilled too 5 stud..
