I think it means Gran Turismo Omologato
which sort of means Approved Grand Tourer

Gran Turismo Omologato is Italian for Grand Touring Homologation.
Basically GTO refers to a production based vehicle that has passed the approval process to race or has passed the standardised testing and rules you must go through to race in a given league or series.
GTO is just a name plate used by a few different companies to distinguish their sports models - Ferrari 250 GTO, Pontiac GTO and of course Mitsubishi GTO.
Many others use the GT for the same reason - Falcon GT, Torana GTR, Monaro GTS and Celica GT - Again these models are all designed to show off the companies racing prowess
